My understanding is that the probiotic micro-organisms feed on the lactose sugar.. so it is gone by the time you get to eating it.

Whey is a super food and should never be thrown out or wasted on the compost pile.. for compost make bokoshi which is a high powered live culture for compost, way to nasty to drink, but it will make the best compost!

Drink the whey. It will boost glutathione levels and, thats why it makes people feel so good. High levels of glutathione can prevent a number of different diseases

It takes time for the lactose to be converted to glucose and galactose, 1-3 days, depending on the levels of sugar and the levels of bacteria. The bacteria are no longer alive in some wheys, depending on the process and the type of cheese made.

The last two spring/summers I was producing over three gallons of whey a week. Way :p too much to consume ourselves! I'd put some into a bottle in the fridge, and the rest would be hauled out back.

You can also boil it down and make that caramel stuff, can't remember the name, that is pure, caramelized lactose. Can you imagine!
