There is no one magic number, it depends on the batch.

The commercial stuff normally says what acidity it is.

Homemade you would have to test with lab-type pH testing equipment which unless you are a VERY serious cheesemaker you are unlikely to have or want to shell out the big bucks for. Just plain ol' pH dip strips will not be accurate enough.
