Who would have ever thought to put pinto beans into a waffle? But, let me get this right....you don't COOK the beans? Just soak them over night and then blend? And, just noticed - no eggs! I don't have a waffle iron anymore :( I'd sure give them a try if I did....pancakes maybe?

Yep, the beans are not cooked before using in this recipe. Never had any gastric distress from eating them this way, either.

The crispy fluffiness comes from the air pockets created while the batter is in the waffle iron. We tried making pancakes one time and the chickens got the result -- doughy and tough.

No eggs and still a complete complementary protein from the beans and oats.

Tonight our desert was 2 pears, peeled, cored and cut in slices. I put them in a sauce pan with a few pats of butter and put on medium low heat. The juice cooked out of them, sweet and yummy. Easy to make, took care of the sweet craving.

For a snack, I like slicing granny smith apples thin, and putting them on a plate so each one is separate. Sprinkle lightly with cinnamon, and eat.

Isn't a potato technically a tuber? But, who cares? It looks awesomely delicious. I'll take mine stuffed with barbeque please! After all - it's DH that has the problem, not me, lol! Gimme that tater!
