Rose hips, what can I do with them?

A friend had a rose-hip pie this year and said it was great. Frankly, I'd have to see it to believe it.

Thanks for the link. Our entire back fence is a solid hedge of wild roses (our grey water goes out there, so they are lush!) I picked a few rose hips last year, but I didn't really know what to do with them
