that is soo disappointing.

I'll have to do some research and see if I can make it in quart jars instead of the crock. I could keep maybe 4 -6 jars in the frig which is already overflowing with apples.

I would dig a root cellar but the water table is so high on my land.

You absolutely can make it in quarts. I think Tankshill does. You can also get two-quart canning jars, which will be easier to use and will still fit in your fridge.

guess I'm going to be doing some cleaning out of the frig this weekend! I do have some larger jars, maybe a few gallon sizes.

guess its time to do a search on kraut to make sure it goes ok.

I have to admit I used jars with and without weights. I didn't have any issues either time.

I however just got that awesome crock made and did a batch last week. When my 3 days were up I transferred the kraut into quart jars and stick it n the fridge.

This was my first batch ever. I actually switched into 3 quarts after Free's advice. More room for expansion.

You could water bath can the kraut after it is fermented, if you want to keep it on a pantry shelf (as opposed to taking up space in the fridge).

Thanks. She like to help in the kitchen. :D

I posted about the weights before. They are ceramic. Very heavy. I guess that's what you call them. I had a local craftsman make me the crock. I assumed the weights were going to be glazed but I was wrong. :rolleyes: I thought about sealing them but just went with them the way they are. They worked great. I just hand washed with hot water and a brush after I used them.

ok, so I can make kraut in the crock and transfer to jars in 3 days.
can't wait.
keep your fingers crossed that I can fit this all in this weekend, along with the rat, the garlic, the hay, and the coop.

geesh.
