Yes, I hate to tell you this, but rats will eat other rats. The other option is, the rat got only a foot caught, and then it bit it's own leg off. Except there would be a leg there. Unless another rat ate the leg. Mice will eat other mice also. We've had half-eaten ones in the trap.

Okay you need to take a barrel...like a garbage can. Fill it half full of water and sprinkle grain over the water to make it look like a can ful of grain. The grain will float. Put a stick up to the top from the floor so they can get in to get the food. (you can put it beneath a shelf that they climb on) Anyway they will jump in after the grain, not be able to get out, and they will drown
