Same here Miss_thenorth. We do roasted chicken with spicey rice and veggies, then Chicken Curry with rice, and usually Kevin will take a chicken sandwich for school lunch for a few days.

Wow, you could get a WHOLE LOT of meals out of that. Doesn't have to be a ton of meat in a meal. Things that make good use of a small amount of meat include casseroles, stirfries, potpies, salads (green or pasta), pasta dishes, burritos.

If these are generous sized chicken breasts, one thing you can do is slice them in halves or thirds horizontally, so you have 2 or 3 flatter slices. Most people these days (self included :p) seem to judge how much they think they're eating by the acreage of plate space it occupies, so the same expanse of thinner chicken does not register as being really any much less than if it were full-thickness.

If it were me, I would use some of the chicken breasts that way to bread and saute, for chicken parmesan (when all sauteed, dollop a little spaghetti sauce on and top with some cheese and put lid on pan for a couple minutes to heat/melt) and some for stirfries; the rest I would gently simmer up to use as cooked chicken meat for any of the first-mentioned long list of things thatcha put cooked chicken meat in.

The drumsticks, personally I would either simmer up 'chinese red style' (diluted soy sauce, ginger, garlic, star anise, a little sugar) or cook in the oven with a marinade, or curry them. But tastes vary.

You can get a LOT of meals out of that amount of meat, if you want.

I would have to say the drumsticks would need to be shake and baked--LOVE them like that. The chicken breasts, I would cut up into stir fries like Pat said, or use in chicken caesar salad , enchiladas, etc

I usually shop once a week. I Make a list of what we are going to eat that week, write a shopping list and stick to it.

If I see any bargins I will alter my list accordingly, but sales and bargins in Belize are very few and far between.

If I am making a curry or casserole, I will also make more than needed and freeze some down, so I can have a day off cooking when I feel like it.

OK. I boned the chicken and made a yummy thick soup for lunch. I knew I could use some extra baked potatoes for something. :)

Now I have some bits of chicken to figure out for dinner. :) 1 chicken, 3 yummy meals.

It's Thursday and I don't have anything on the list for the weekend grocery shopping. I'll have to pick up a gallon of milk in between, but I think I might be able to stretch the last $70 grocery bill over TWO weeks.

I bet a lot of you guys can do that all the time, but we usually spend over $100 each week.
