Shrimp Scampi over Spaghetti Squash

Made this last night and it was awesome!

Bake off a spag squash. Scrape out, it a bowl.

Start a med hot pan with EVOO and butter....add garlic (keep the heat moderate so the garlic does not burn) after about a minute add shrimp. sautee until cooked thru, add a hefty squeeze of fresh lemon, add the *pasta*, toss to heat thru and dish up.

It was wonderful. :thumbsup

Oooo that sounds really good! I really like spaghetti squash, DH and the kids don't care for it. Can you freeze the cooked squash I wonder? *scampers off to check*

ETA: Yep!
Leave squash whole and pierce so steam can escape, or halve and remove seeds. Bake in an oven or microwave oven, or steam on top of the range until tender. Cool quickly by placing pan in cold water. Cut in half and remove seeds if necessary. Rake through pulp lengthwise with a fork to separate strands. Pack into containers, seal and freeze.

For those who know how farmed shrimp are raised and what's in them (hint to anyone who might want to read up on it ;)), I find this kind of recipe is just as tasty with chicken used instead of shrimp. Mmmm, garlic, lemon and olive oil! :)

Sounds great Dace. I just planted spag squash yesterday. They actually store really well. I will try this mid summer.
