Over 30 years ago, while I was obtaining my Masters in Food Science, I took a meat science class. We slaughtered a cow, lamb, pig and chicken. Now that I'm rural, I sure wish I had retained all that I learned. I can do it someday, and no the pics were not graphic but rather, fascinating.

Thanks for showing us greenhorns how to do it, and for Woman Power! Together we can do ANYTHING!

Oh and good job, Mom and daughter!

Your mother reminds me of my great grandmother and my grandmother. They both did all that farm work too. I learned a lot from both of them. They were self sufficient, because they had to be. They are my models and heroes.

I'm with you, Wildsky. I'd love to learn how to turn rabbits into rabbit meat - i keep hoping somebody will post on that. The calf pictures were really great, Bee. THANKS! :clap
Did you find something? If not, I can do a step by step next week when I do a rabbit.

Gee, I'm sure glad y'all liked the pics! :) Thanks for all the support....I was kind of afraid that someone would be offended by us killing our own calf. We can't tell my sister about it at all for fear she will get mad at me and the folks at the office get inflamed every time I mention killing an animal on this place. You never really know who will get mad and report a thread as too graphic. :hu

Next time we get a deer, we'll do a step by step field dressing with the pics up close so you can see how to cut around the milk sac, scrotum, rectum, etc., cut through the pelvic and sternum, cut the scent glands and all that jazz. Mom is pretty darn good at it after all these years and deers!

This could become a regular thingy with members doing a step by step learning center on processing each kind of animal or even baking bread. You folks with high speed could even benefit from videos of making bread, pressing cider, milking cows or goats, making cheese, etc. You all have enough combined knowledge on this place to fill a whole book on step by step info!

Wouldn't that be cool? :thumbsup

ETA: My youngest son, Jon, wanted you all to know that he was the one who performed the brief rodeo that put the calf into the right position, pulled the trigger, operated the saw on the legs and drove the truck for pulling the hide...... To clarify...he wanted to do the killing, as he felt it was the man's job..... ;) Must give him credit for trying to help while I took the pics and all. :D Men....

I'll try to do some step by steps on the tanning of the hide if I get a chance.

Everyone is right Bee, your mom is adorable!

I know how that feels.. my dad and brother are the first ones shooting and at the table, but last ones processing. They left that to my mom and I, although we didn't mind. But if you shoot it, you clean it, that goes for either gender. I remember out there as early at 7 helping her.
My mom, 100 pounds soaking wet, would be the one on the ladder twisting the head off the deer with her bare hands.
Any women out there wary about butchering on your own; you can do it!

Great job on the calf Bee, Bat, and Jon too!

Fantastic job!!! Great pictures!
My mom was awesome when it came to processing the deer a friend gave us. DH was the first one to quit on us. 14 yo DS reluctantly helped us...but he sure does want to go hunting! I told him if he wants to shoot them he has to learn to process them!
Your mom is adorable!!

Me too!

And I'm just curious, why didn't you want to show the gutting process? Were you worried about offending someone? I think we can handle it. Did you take photos of the process? If there is enough interest, you should post them and describe how to do it for us newbies. :D I would love to learn how to do the whole job. :thumbsup
