Soup and Stew Time

I put off soups and stews til the weather turns cooler--in NC the heat means I just can't handle these meals.

but in cooler weather a warm belly full of stew is just right! :)


So who is hitting the soups and stews now and what are your favs?


I made a monster delish beef stew the other night and it was wonderful---and I made a giant pot of chili....I rarely make chili and Tony just ate the whole pot! :)

I l o v e soups! and chili, not stews though. My fave right now is cream of broccoli, the kids fave is still chicken noodle, also ds likes tomato, dd likes cream of mushroom, and we all like a good french pea soup every now and again. Hubby says I havent made one bad soup--he eats them all. I will make stews on occasion, as hubby likes them, but not very often.

When the weather cools down I crave soups, stews and chili.

Lately I made chicken soup with carrots and cauliflower and a cream sauce. Chicken and broccoli, beef with caramelized onions, carrots and rutabaga, and a beef, pumpkin and mushroom stew.

Chili is usually ground pork, ground beef, and, thanks to the local farmer's market, fire roasted hot red chili.

Mmmm soup. My favorite is taco soup. Ground meat (usually beef or venison, although its good with chicken or sausage too) with hominy, tomatoes, onions, bell peppers, garlic, cayenne, chili pepper & lots of cumin. Topped with cheese and yogurt or sour cream & fresh cilantro mmmmmm

Mostly I'll just see what's in the fridge, freezer or on the shelf, add some broth and/or tomato sauce & adjust accordingly :)

Right now I want some gumbo tho...

I like beans when it gets cold, too. Big pot of savory pintos with some diced onion and a buttery triangle of cornbread mmmmm

I'm making soup today - turkey barley leek soup. It's my favorite!

* 1-2 Tbs each butter and olive oil
* 2 leeks
* 2-4 carrots
* 3-5 ribs celery
* 4 oz. baby portobella (or white) mushrooms
* -1/2 tsp bay leaf seasoning (or one bay leaf)
* 1-2 tsp thyme
* 6 c. chicken broth or turkey broth
* 2 c. cooked chicken or turkey
* c. barley*

Instructions

Slice and saut vegetables in butter and olive oil about 5 minutes. Add seasonings and saut a few more minutes. Add broth and barley. Bring to a boil and reduce heat to simmer until barley is done, about 30-45 minutes. If the barley soaks up too much broth, add more. Add chicken, 1 tsp salt and -1 tsp pepper.

My favorite ever is Caldo Verde, it's a Portugese recipe (means "green soup").
Forgive my non-detailed recipe, I don't cook with recipes. :p

Ingredients:
polksa kielbasa, sliced
white beans (usually navy or northern) pre-soaked
potatoes (usually 1 or 2 large), shredded like cheese
chicken stock/broth
kale, shredded
onion

Directions:

Saute onions in pan, then add kielbasa and cook for a minute or two. Add stock. Add in beans and cook for a while, then add potato. Then add kale and cook until done. Add salt and pepper to taste.

This soup is soooooo good!

My all-time fav is chili (pretty much follow the Betty Crocker recipe, but either eliminate or only use a sprinkle of the cumin. Some reason, I just don't like that stuff :sick)

I also like the "let-it-simmer-all-day-surprise" of whatever veggies/beans/peas are available mixed with ground burger and/or venison with some tomato sauce thrown in for good measure. Season with dash of red pepper flakes, salt and pepper. Maybe some herbs if it strikes my fancy....

That sounds like my "clean out the fridge soup". :lol:

Yeah - I just toss in some canned veggies to round everything out ;)

I made the most delicious curry pumpkin soup. I could eat that stuff every day.

DeeDee's Creamy Curry Pumpkin Soup

2 Tbsp. olive oil
1 onion, chopped
2 cloves garlic, chopped
2 stalks celery, chopped
4 cups broth (I happened to have beef, but chicken or veggie would work just as well)
2 tsp. curry powder
4 cups pumpkin puree or 1 29-ounce can pumpkin puree
1 14-oz. can coconut milk, or evaporated milk, or 1 3/4 cups cream
Freshly ground black pepper
Salt to taste
Dash of cayenne pepper (optional)
Dash of hot sauce (optional)

Saute onion, celery, and garlic in olive oil. Add broth and simmer until vegetables are totally soft. Puree in blender in batches (or use hand blender if you have one), return to pot, add remaining ingredients, and heat. Enjoy!

You could also use different types of squash.
