since i broke my glass pan i haven't been making any small batches of beans like i used to do once in a while. :( the rest of the time i usually make 2-3 gallons at a time and then we drain them, put them in quart jars and freeze most of them for later use. i'll keep a few quarts out for eating. we have a lot of burritoes (with no shell on them so it's really more like just beans on a plate with things on top - often cheese melted when the beans are warmed up - i like plain yogurt, lettuce and tomato and then use a shot of hot sauce on top of that to give it all a little heat and zip).

i really like it when i have enough of a new bean that i've grown that i can cook some of them up and see what they taste like all by themself, what the texture is and how long they take to cook. some people don't care and will cook their beans with meats and spices which is also good to me but i also really like tasting them very plain with perhaps just a bit of butter on them at the most so i can see how they compare to all the other beans i grow.

and, yes, talking beans around me is dangerous as i do grow a lot of them, cross breed them, and will chew your ear off if you give me a chance. :) haha!

since tastes are so varied i can't really know what you consider bland.

i happen to be fine with things like plain oatmeal, plain malto-meal or pasta, cold tofu right from the package and tapioca pudding with not too much sugar or other flavoring in it. those things are likely considered very bland by other people who want more oomph. :)

so here's the list of beans off the top of my head that i think have more flavor than others:

pinto beans, black beans, dark and light red kidney beans, small red kidney beans, garbonzo beans (aka chick peas), lentils. i also happen to like peas so green and yellow peas could be on this list too if you can eat those.

if it is a question of texture there are also bean that have more ability to withstand being cooked for a long time, i have some that will hold up to cooking for hours and still not fall apart so they're a good bean for making chilis and using as more of a meat substitute because they have more chew to them.

texture is HUGE for me---I am not a fan of mushy beans unless they are a refried texture or made into something else. But if it is a bean meal, I enjoy some substance.

I just thought hubby's comment was hilarious.

My blood sugars actually don't react to potatoes very much. It's one of my safe carbs. It's the tortilla chips and salsa I've been on for the last couple months that did me in. I've just been having super cravings for them. Which probably means I'm missing something.

Only thing worse than corn for me is rice. Mostly if I stay away from those two things my blood sugars are good.

I don't eat a lot of bread, but that's because of the issue I have with dough conditioners. Pasta is only once a week because hubby isnt huge on pasta. He wont eat potatoes more that 3 or 4 times a week. Whereas I can eat them every meal because we did when I was growing up.

You could be missing something, but before assuming that, check if they have "natural flavor" in the ingredients. Those are the ingredients that cause addiction behaviors.

These are corn and salt. I'll place bets it's the salt since I've never been one to use a lot in cooking. The salsa is bare bones as well.

And that makes me a hypocrite because I got on Mom recently because she doesn't use any except a little on meat. Her sodium levels are so low, her doctor is thinking of putting her on salt pills.
