I would be leery of using spruce. It's a highly resinous wood, and a lot of the resins of evergreens can be toxic. I dunno that i'd risk it.

Ditto this. We've always stored our carrots in damp sand.

why not contact the extension office? I did some research that said pretty much all spruce is ok (not toxic-- dunno about palatability) but the extension might have more info for you.
