If you can't eat the carbs, big lettuce or cabbage leaves work wonderfully to wrap those in ;)

I love to use butter lettuce for them. This recipe is so versatile, I just love it!

I have a peanut sauce for them and make nuoc cham too!

My roommate wants an excuse for tofu noodles so I might make these this next week.

Oh yes, it is good in lettuce; all sorts of other things are good in lettuce wraps too, incl. curry type stuff :) I find that I eat less in wraps than with a Big Plate O Curry in front of me.

Nuoc cham (my preference for summer rolls, too) is just something like:

one part fish sauce
one part (or less) lime juice, pref. fresh squeezed
one part water
sugar to taste
minced chiles and garlic to taste
optionally add a little crushed peanuts and/or finely shredded carrot

It also makes an untraditional but excellent salad dressing :)

Every area has their own recipe for it. I HIGHLY recommend the book Hot Sour Salty Sweet . Best pad thai I've ever had is in that book too!

It has peanut sauces too. Although my peanut sauce is my own random creation and not at ALL traditional.
