I got in from work last night and wondered what to fix for supper. I cut a small head of cabbage, pulled some green onions and cut some brave broccoli sprouts that were trying to make a comeback after our 2 weeks of below freezing. Yeah, I know, some of you still have snow, but here freezing weather is a big deal.
I peeled some tomatoes from the greenhouse and threw it all in a pot with some sliced carrots, seasoned it all up and simmered the soup while I got a shower. I garnished the bowls of soup with a green onion and we dug in. Simple, but so good. Why wouldn't anybody want to have a garden? From picking to serving was about 45 minutes. I am home for lunch now and just finished it up.
What quick and easy supper recipe do ya'll like to fix?
