Supper Last Night

I got in from work last night and wondered what to fix for supper. I cut a small head of cabbage, pulled some green onions and cut some brave broccoli sprouts that were trying to make a comeback after our 2 weeks of below freezing. Yeah, I know, some of you still have snow, but here freezing weather is a big deal. :lol: I peeled some tomatoes from the greenhouse and threw it all in a pot with some sliced carrots, seasoned it all up and simmered the soup while I got a shower. I garnished the bowls of soup with a green onion and we dug in. Simple, but so good. Why wouldn't anybody want to have a garden? From picking to serving was about 45 minutes. I am home for lunch now and just finished it up. :celebrate

What quick and easy supper recipe do ya'll like to fix?

That sounds ridiculously yummy! I always have a ton of homemade stock on hand, so simple soups are my go-to quick meal. I also love sauteing fresh veggies in chicken stock, then putting them over rice or pasta. Simple, but delicious.

One of the easiest and fastest meals for us is to grab anything in the frig and make a wrap with it. I almost always have some kind of flour tortilla thing in the frig. If there's nothing that sounds good as a wrap (green beans just wouldn't cut it for me), I always have some refried beans and cheese.
Microwave for hot, or just eat it cold.

Grilled cheese sandwiches and tomato soup is tops as far as my husband is concerned if we need a super fast meal.

I usually have premade soups in the freezer and sometimes individual dinners made with leftovers. Just nuke and serve.

I make a one pan medley.

Put strips of your favorite meat in a fry pan on medium heat. Cook covered for 10 minutes. Stir meat and then add sliced yellow squash, zucchini and coarse diced onions on top of the meat. Cover and cook for an additional 10 minutes. The meat juices will steam the vegetables while the meat finishes cooking. I slide it all onto a deep plate and dribble the delectable veggie broth / meat juices over the top. It's very yummy without seasoning.

Adding a shot of Worchestershire to the meat, right before adding the veggies, hops up the flavor. So does conservatively shake coating everything with a masala or your favorite seasoning mix right before adding the components to the pan. This medley works well with curry, vindaloo, or taco/chili seasoning. I especially like shake coating with Paul Prudhomes seasonings.

We have Salmon patties ALL the time. DH and DD loves them! I usually just mix in some meal and fry in a drizzle of bacon grease.

Huh, my Mom always did salmon cakes with mashed potatoes, egg, dill or whatever other herb she felt like, and salt & pepper--super yum! Haven't made them for a while, may have to put them into the meal plan rotation!

Last night we had roast chicken, scalloped potatoes, and carrots. Night before was bison chili con carne with nacho chips and tonight is spaghetti and meat sauce (made from the other half of the bison hamburger I made the chili with) with salad. Tomorrow will be chicken pot pie with the chicken leftovers and Friday is tuna rice casserole (tuna, onions, cheese sauce, cooked rice all baked until bubbly with crumbs on top).

Quick soup here, too, it is snowing! I made catfood and was canning up the resulting broth for us, and reserved some to make a soup for supper. Added the last of the frozen garden scallions, garlic, rosemary, and parsley, oh, and some of my homemade sea salt. Diced up some rutabaga and carrots and simmered, then shut off the heat and added cut up broccoli and sugar snap peas. Opened a quart of home canned turkey breast and broke that up and added it. Black pepper, and man, was it good!

I made buckwheat pancakes (ployes) to go with it. I have enough of the mix left to make one more batch, and I am ordering 25# of buckwheat groats (organic) next week to make my own buckwheat flour, finally! So it will be a homemade mix soon. (Hope to grow it eventually.)

The night before I had nachos with a whole pint of fermented salsa made last fall. All by myself. DH had a jar of bean soup with pork I'd made a few months ago. Cleaning out the fermenting fridge and older canned stuff to get ready for the new season. It was so good!
