Normally, the onion and garlic would both also be from my garden (but this time, alas, I am out of last years stores of both and this years are not yet harvestable)

So, what comes from the store? The salt, the oil, the flour and the sugar. That is it. Almost everything comes from right here on the farm. How cool is that?? :D
We have perennial onions and garlic, our own eggs and milk and flour from cousin's farm, so when I make this it is an incredibly self sufficient feeling. I buy the cheese, but I should get out my cheesemaking kit and make some mozzarella!

I just LOVE my greens, especially chard and beet greens!

I use them in place of spinach in many dishes. Have you tried chard lasagna?

After the first layer of noodles I layer the steamed chopped chard into the lasagna dish with ricotta cheese (or cottage cheese sometimes) Parmesan cheese and sauce, then noodles, then I add a second layer of ground spiced meat (usually ground beef) more sauce and mozzarella (or sometimes cheddar) cheese then a final noodle layer then more sauce, mozzarella and Parmesan.

I also like a bit chopped up in my morning omelet.

Mmmmmm...

I also use it heaped on top of pizza--right above the sauce (often pesto) and right below the cheese. A mountain shrinks down to a nice layer after cooking. Or, first stir-fry with garlic and onions.
