The biggest issue our child has is extreme constipation, ADD symptoms are highly noticeable when eating wheat flours. Not a lot of muscle tone, and small for age.
Biggest loss and most missed :hit in our family for sure has been a good loaf of bread for sandwiches, pizza etc.
My husband who has wheat allergies also has IBS type symptoms, he was completely gray by 30.

Super easy to have the initial test done is drawn blood took 5 minutes, once that came back positive we went to an allergist who did more blood and tests and confirmed more allergies (dairy, eggs)

Alternative flours to start experimenting with are cheaper at asian markets, about a 1/3 of the cost.
Pamela's makes the best products if you can still have dairy IMHO
I would just bribe ;) him and get the tests done, it was a relief to know in our household, things are a lot calmer digestion wise and behavior wise.
If he is not on board it will be a huge uphill battle to get him relief of his symptoms, my husband will still make himself miserable for a sandwich or pizza on occasion.

*eta. A lot of soy cheese has casein (derived from milk) so take that into consideration

Another one:

On the initial elimination diet, you can eat the following foods:

any vegetable but corn, peas or beans
any meat but bacon, sausage, hot dogs or luncheon meat
rice, oats, barley and the grain alternatives amaranth, quinoa and buckwheat (available at health food stores)
any fruit but citrus (also avoid any fruit you currently eat more than once a week)
bottled, spring or distilled water and herb teas.

6. On the initial elimination diet, avoid:

milk
tea
coffee
Kool-aid
soft drinks
eggs
bacon
sausage
hot dogs
lunch meat
peanuts
peas
beans
corn
citrus fruit
any fruit you eat more than once a week
processed foods
sugar
wheat
chocolate
food colors and dyes

Can you do raw milk?

So far the only 100% no reaction has been sheep cheese, so we are planning on milking our sheep in the spring and hope we can drink it :fl
We are also going to retest when we start eating turkey eggs and still need to try duck eggs.
Mostly we are eating whole foods and really missing a lot of comfort foods, and school has been letting them warm up their foods (normally not allowed) for this issue.

*goat milk seems to be hit and miss, sometimes we see a reaction, sometimes nothing.

Just a note. I was looking into this too at one point. I was told--If you are going to do the dr. route and have the blood test done--DO NOT do elimination diet before hand==it will screw up the results. If, however, you just want to do the elimination w/o the doctor, go ahead. I was going to eliminate but decided to get the test done. so I will not eliminate before hand. My physical is in january.

I totally agree, we were told by regular dr. to start eliminating even though I read you should not and the GI dr was a wasted appt. because they cannot test you at that point.

I'm glad I scrolled down, MTN. I was just about to ask that.

So, which would be better, to go & have the test & know conclusively whether it's gluten or do the diet & find out on our own?

The way I read it, the test isn't 100 % reliable anyway. I decided to go the dr. route, mainly b/c of OHIP--I don't have to pay to go to the doctor. If the blood test comes out fine, I will try the elimination just to see what if. I have similar symptoms as your hubby, but I also have a melting pot of other medical issues.

For us, I am pretty certain there are food issues, gluten is not the only suspect here. That is why I am considering the diet....I just don't know what I would feed everyone!
They are bagel, sour dough english muffin, cream cheese, peanut butter freaks who don't like veggies.
