Luckily I've got the celery covered . . . I still have some growing. I have a good stash of stored pasta, so I see myself eating through that. Oh and yes there is a huge box of ramen noodles . . . but my husband eats that. I'm not a ramen eater, but I'm sure I would if it came down to it.
The way I have been preparing the nettles is that I will boil them in a small amount of water for ten minutes. Then I will set the greens aside and save the water for tea. I prepare the spinach dish to the point where the spinach is about equally cooked and then throw in the nettle greens.
Right now I only have enough nettles for maybe one meal a year, but OhioFarmGirl sent me a link to a guy who makes nettle pesto, which sounds really good to me. Maybe I can try that next year.
