Lentils need a little soaking...not to get them to cook, but to neutralize phytic acids. They don't need overnight soaking like pinto beans or split peas.

Good grief, this was not the night to google phytic acids, lol! Would I be anywhere in the ballpark to say it binds with essential minerals and prevents absorption?

And that perhaps adding some acid, such as lemon juice or vinegar to the short soak will help alleviate that effect?

Bit off WAY more than I can chew here! :D

Would a 2 hour soak work?

You got the basics.

lentils should soak for 7 hrs

Mmmmmm....I love pea soup. We usually make ours with dried salt pork. The seasonings on the pork get into the soup and aggghhh..*drool* My husband gets grossed out because I love to eat the fat. In fact I usually call it fat soup :D . When my husband has a snow day (he's a teacher) we always make fat soup and bread for lunch and then sit around and make fun of soap operas and work on our little projects. Ahh, there are good things about wintertime. So much different then the run around craziness that comes with the rest of the year. You guys all made me hungry for it though...might have to add some to this weeks menu.

Hmmmm.... I have a ham for today, so I could make split pea soup later and freeze the bone for when I want lentils. Yum!

LOL my Hubby and I like to cuddle up on the double recliner and make fun of the news.

Tell your hubby the fat is good for you :D It's the best part.

I know thats what I've been telling him. Plus I've got to bulk up so I can keep warm :lol:
