Tuscan Soup (needs a bit of help)

I want to make this soup tonight. However I want to make it as low carb as possible. The ingredients in bold need to be altered to make it more healthy and figure friendly for me. Any ideas? (It got pretty good reviews as is too, if you are interested.)

Tuscan Soup

Ingredients

6 cups chicken broth
1 onion, chopped
3 (3.5 ounce) links spicy Italian sausage
3 large potatoes, cubed can I use parsnips?
1 bunch fresh spinach, washed and chopped
1/4 cup evaporated milk any healthy substitution ideas? cream?
salt to taste (I'll use sea salt)
ground black pepper to taste


Directions
Remove skin from sausage and crumble into frying pan. Add chopped onion, and cook over medium heat until meat is no longer pink.
Place meat in a large pot; add stock and potatoes. Boil until potato is cooked.
Add spinach.
Continue boiling until spinach is lightly cooked.
Remove soup from heat, stir in evaporated milk, and season to taste.
Do not add any salt if using canned stock.

Parsnips are hi GI....what about cauliflower to replace the potatoes?

I would use cream in place of the evap milk....shouldn't make any difference.

Also my BF makes a version of tis and uses kale, since it lends itself to hard cooking.

That looks a lot like my favorite soup recipe. Only mine has bacon! :lol:

I use cream right before serving, a couple of spoonfulls per bowl. No idea on the taters... I did cut the amount in half to reduce the amount.

Maybe celeriac or turnip? Cauliflower?

BBB, if you can find the bulk spicy italian sausage, you'll save some money. Links cost more than bulk, as they have to buy the casings, then stuff them with the machine and then lay them out on the tray, and wrap. Bulk is either in the meat case, or in tubes (like Jimmy Dean) next to the links, etc.

One more thing: Tuscan soup frequently has white beans instead of potatoes. Not lo carb, but lots of fiber. Yummy!

I make a similar soup but no potatoes; Italian green beans.
