That there is an example of different people reacting different ways. Mom and Dad are insulin dependent diabetics and they can eat rice. I have to avoid it and I'm only a diet controlled borderline. Straight up sugar causes less of a spike in me. Actually sugar ranks below rice and corn, but at the same level as wheat for me.
I'm usually very good with my blood sugars. Been this way for 16 years. I can't handle needles so that's a huge incentive. Then look at my younger brothers who don't take care and will both be insulin dependent soon. Youngest is very close to that.
