Well, it's official... I'm joining the gluten free ranks.

Having suspected a gluten intolerance for about a year now, I finally did something about it. I have not had bread or pasta or the like for almost two months. Then two days ago, being very hungry and not having anything else prepared, I had chicken noodle soup with WW bread. Then yesterday, we had dinner at the inlaws place and I had stuffing.Then we stopped by my parents place, and mom mentioned that I have several cousins on both sides of the family who have celiac disease (that info might have been useful a long time ago), but anyhoo, it just confirms my thoughts

Today, I feel like CRAP, literally and figuratively. I am officially swearing of gluten. And now to top it off, I am suspecting my son has the same issues but nowhere near as severe as me, and the boy loves his bread. I want to eliminate gluten for him for a while, too and see if it makes a difference.
I know there are alot of gluten free people here, so what is the best gf flour I can buy so he can have bread. Me? I won't miss it that much, but will miss pasta.

Any facourite recipes you have discovered?

My 7 yr old seems to have a gluten intolerance/sensitivity.... she can eat gluten, but if she has too much in a 24 hour period she gets a belly ache.

Not fun but definitely workable!

See, I never really had a belly ache. Here we go with the TMI. :p I had very painful BMs, and probably up to 10 a day. While GF, I had regular BMs, (the first time in about 10 years.) I had previoulsy chalked it up to IBS. Now I know better.

I think I have mild gluten intolerance also that effects me like yours in the way of IBS and tiredness, not pain like many Celiacs describe. :/

I stopped eating gluten in January - i've been feeling good ever since. I don't have any recipies, I just don't eat gluten. I don't eat much of the gluten free products, but I do get the rice noodles occasionally, and they are good. The only caution is to undercook them somewhat. They get mushy very quickly, and aren't really good for leftovers, but I usually do baked ziti or a casserole where they hold up pretty well - I just undercook them before adding the otehr ingredients.

I don't use substitutes. I just avoid grains all together. Instead of pasta, I use shredded cabbage "noodles" friend in butter. It works great and tastes especially good with chicken and alfredo sauce on it. For pancakes I use almond meal.

No gluten allowed here. Apparently. >.>

I do low carb anyway, but my "cheating" can't include any grains at all.

Like Auntie Zilla, I don't substitute other grains. I just use veggies. I eat more veggies now than I did as a vegetarian LOL.

This is my recipe site . There are a lot of low carb and gluten free recipes there. If you ignore the blatent yummy bread ones from before I gave up the carbs lol.

I am grain free as well but my DS does eat some substitute grains. I've only done bread from Bob's Red Mill mixes. They seem to do best with a combination of flours rather than just one. I want to say mostly rice flour with some potato starch and tapioca flour? And xantham or guar gum.
I was actually told by a doctor that I probably had IBS. I don't believe that was true now that I've been diagnosed with gluten sensitivity. My symptoms included joint pains, fatigue, and just a generally unhappy gut. All have cleared since I stopped eating gluten.

My brother was diagnosed celiac at the age of 47! They thought he had stomach cancer. Thankfully, they discovered he was just celiac.

Then we all had to get tested as apparently 1st degree relatives have a 20% chance of being celiac.

It's amazing how much food has gluten either naturallly or added.

DD frequently says her legs hurt....I was just thinking growing pains, now I wonder about gluten! Dang. I better do a little digging.
