I peeled and seeded 50 pounds of organic tomatoes today (got them 1/2 price at the farmer's market). They're cooking now into sauce. I'll can them tomorrow.

I never peel or seed my tomatoes. I quarter them and cook them. If I need to, I run them through my victorio strainer, otherwise, I just use my stick blender and blend everything up in the pot. WAYYYYYYYYY easier - and I'm a lazy canner so any and all shortcuts that are safe are being used here.

Same, except I don't have a Victorio--I have this. I'd love a Squeezo, but until I find one at a garage sale or similar, my tomato press works pretty awesome for both tomato and apple sauce. I do have to run tomatoes through twice to really get the goodness out of the skin and seed pulp, but it only takes a few moments to do that and has saved me tons of time with peeling (never did remove the seeds in the past).

Seeding wasn't much work. And peeling was pretty easy: I froze the tomatoes when I got them Sunday so as I tossed them into warm water, the peels mostly just slipped off. DH hates tomato peels. It took a while just to get him past his prejudice against tomatoes, so I want to make sure that anything I bother canning is something he'll eat.

Just did a whoopin' 4 1/2 quarts of tomato soup. The way my tomatoes are going, which is very S.L.O.W.L.Y. - I'll be lucky to do this many at a time.

One batch of quart sauce done, one simmering. A double batch of sweet pickle relish soaking.

Should be a productive day.

I made some tomato soup for lunch for DS and I. I had to go buy tomatoes to make mine.

I've got 20 pints of tomato sauce in the pressure canner. The rest of the tomato sauce is cooking with some celery, onion, garlic, and hot pepper to make arrabbiata sauce. I'll pc that tomorrow or later tonight, once the canner cools enough to take out the sauce.
