Got a batch of quarts of marinara done this weekend :weee
Had all but 1 quart seal!
Next weekend, on to chicken stock!!

Yay! I managed to get 7 quarts of stock and 8 pints put up this weekend!
Wahoo for being productive!

Does anybody have any recipes for canning beans? I like to soak my beans, and then cook them myself, but that takes a lot of work, so doing a big batch would be easiest. And with the lack of freezer space, that makes it difficult to store in the freezer. For chili and other recipes it would be awesome to use my own canned beans!

Beans are one of the simplest things to can, no real "recipe" needed--the instructions should be in your basic canning book or the instructions that came with your pressure canner.

But all you need to do is:
soak your beans overnight in lots of water,
drain and rinse,
dump into large pot and cover with fresh water and bring to a boil
(just to heat them to get them ready for canning),
then fill each jar 2/3 full of beans with a slotted spoon,
fill the jar up to leave 1" headspace with fresh boiling water (I use a kettle)
and process for 75 minutes (pints) 90 minutes (quarts) at the correct pressure for your altitude

All the water changes help get rid of the outer coating of the beans that make them less digestible (think gas) :)

Canned 3 jars of chicken, 4jars of chicken stock and 8 jars of strawberry preserves, which hasn't set up.....

I did 7 pints of strawberry lemonade concentrate and it turned out beautiful.

You guys are inspiring! I managed 8 pints of blackberry jam, and the vines are only about halfway through producing. Praying that the wind does not knock the apricots off the tree, my favorite jam! :)

7 pints of strawberry jam. I'm hoping to do another 7 in a few days.

I'm watching for the Oregon Grapes and blueberries to ripen. Yummy jams there, too.
