@tortoise i would not worry as much about apple butter anyways as it is pretty concentrated and there is some acid in apples too. when you concentrate those sugars they act as a preservative. doesn't hurt to be safe and i usually add a bit of lemon juice to apple sauce because i like things both sweet and sour so it is ok for me, but we've done apple sauce plain here with nothing added and it was fine. in a pinch you could always check the pH...
I have canning pH test strips. I'd forgotten about them!

I canned 4 pints organic pears in water tonight. Need to use up produce in my weekly Misfit Market box! Sometimes we eat it all, sometimes its not as easy!

Other food preservation: checked 48 oz cranberries and have them in the dehydrator. Baked, peeled and froze sweet potato.

Homemade cranberry juice is so good and super easy. I am ordering a 35 pound box of cranberries, just to can cranberry juice.
It is just washed whole cranberries, a little sugar and hot water. Strain out the cranberries and eat them or add to smoothies or use in muffins or whatever. Drink the juice.

Drum roll please....... IT WORKED! I made jelly and it jelled, lol. I'm actually kind of shocked. But here's the proof:
