I chose the Carey/Nesco based upon Rose Red Homestead scientific experiments. It was $110 and will arrive tomorrow.

I have my Mother's old Presto and I bought a used All American about 3 years ago. They work perfectly for large batches, but I wanted something to do 4 jars in when I have a bit of something to can up.

Did you use tap water? I used distilled because of the crappy water here
Interesting. I will be watching to see if my well water affects them. I don’t drink it, but I cook with it and use it for coffee or mixing up juice and everything else. I’m just super picky about what my water tastes like.

Drain and pat dry with paper towel and potato salad is fast! 😁 cream and butter, great mashed. Fast soup. Yep, useable. We just must retrain TO USE. I can sweets, too.

Kinda same with caning dry beans -- ready to use! Less expensive than store shelf ones.

So far I've been able to resist pushing the Amazon send button :old :lol::fl

potatoes will store for some time if it is properly done so i think that canning them is a waste of time and resources. i would search for that on-line first and see if it will work for you somehow. then after that if you still have some that won't store well or could use to be canned then go from there. :)

we only can tomatoes now and i've not made cooked jams for quite some time as i like the freezer version much better for those.

Potatoes last a long time if kept cool and dark. Around 50° works really well.

Mom gets 300 pounds of russets each Sept when the potato shed is running. That's 6 boxes. They last her until about March or April when she runs out. 1 stays inside in the back bedroom that she closes the heating vent in. A newspaper is put on top of them in the box in there to block out any light coming through the small opening.

The other 5 boxes go out in her old wooden shed. I brought some 4 inch thick 3'x3' Styrofoam sheets down for her. (Recycled from hubbys work). She has one on the floor to set the boxes on and 3 surrounding. Front has several layers of cardboard she can open. Top is cardboard with a few old blankets over the potatoes. They don't freeze even in a cold eastern Oregon winter. Potatoes that freeze get black spots.

She'll bring in about half a box at a time to use. They just go into an empty box.

Grandma kept her boxes of potatoes out in the unheated quanset hut. Great aunt keeps hers in her well house.

If potatoes start sprouting because of temp, knock all the roots off and they will still keep.

Canned potatoes are good for fast meals. I can see the benefit of them.

Canning potatoes is a HUGE time saver after the batch is finished. When the kids were little, used to get 50 lb bags of potatoes to can. If it's just a person or two, I get what you are saying. But when needing a mess of taters, opening a jar or two made fixing dinner so easy.

I rarely eat potatoes any more, but pulling out a quart of canned potatoes cuts down on the waste when buying fresh, too

right, the quantity of potatoes we eat is actually very low. personally i have to be very careful of prep and eating as the raw juice will cause problems on my skin and if i happen to eat some that isn't cooked enough it can cause anaphylactic shock. i do like them once in a while but i'm not nearly the mashed potato monster that Mom is. :) she really likes them with plenty of gravy and butter. once in a while i cook some mashed potatoes from scratch because i know how much she loves them. :)
