Good evening, I would like to start by introducing myself, I am Lynn, male, 49, married, two kids at home, love cooking, just discovered I love canning, work in a factory, have a ten acre farm in Oklahoma working toward self sufficiency, Have a canning question! Do any of you can Sour Krout? I remember my grandmother putting krout up in pint jars and putting them in the garage for a while to ferment, do any of you know how this is done, I was small and all I remember most is how I loved eating it!! I read in the Ball canning book but I do not remember my grandmother fermenting hers in a crock or anything first and then canning it, any help would really be appreciated, Lord knows I sure miss my grandma now that I am trying my hand at canning, I know she would be proud of me though. This is how my 83 year old dad does it:

Chop cabbage and pack in jars. Put in 1 tsp. salt. Pour warm water to about 1" headspace. Hand tighten jars. Put in cool, dark place for about 6 weeks. You may want to put papers or a towel under jars as the kraut will "work" and might leak.

My dad's kraut is just the best, white and firm.

Yesterday's canning 7 quarts whole tomatoes, 10 quarts tomato juice, 4 quarts spaghetti sauce plus 1 pint, and 3 of the cutest 4 oz jars of my hubby's serrano peppers roasted then pickled!

Today I am working on some salsa.

Well, it's been slow on the canning front... Between classes for foster-care, my wife's car blowing a motor (and my Jeep breaking down on the way to pick up a new motor!) Well, not much has been done as of late!

Tonight, I tried a new recipe for beef stew (looks more like soup though!) I put up seven quarts of this beef stew which will need a thicker broth when made into a meal, but it looks good.
We had picked up a large bag of carrots and between the last of the ones in the garden, and the store bough, I had enough left over to put up three quarts of carrots too.

PS, the stew was made with fresh dug potatoes from the garden too. ;)

firefyter--The stew looks great! I'm interested that you're taking foster-care classes. We took the training, too, and I started a thread on foster care a while back. There are actually quite a few folks here on SS that are either thinking about foster care, training for it or currently doing it. Maybe you would like to check out that thread :)

Regarding canning, I would like to try fruit ketchup next. Has anybody done ketchup before and do you have comment, suggestions or excellent recipes?

Great looking beefstew. Beefstew and chili are next on my list of things to can.

Yesterday was rabbit and chicken canning day. I canned 3 quart jars of chicken and 1 jar with rabbit. DH insisted that the rest of the rabbit go to the freezer. :hu Oh well, maybe when I open that 1 jar and he eats it he won't be so head strong about it next time. LOL

apple pie filling

ETA recipes


These are the two recipes I use most often..

Canned Apple Pie Filling
Makes 7 quart jars of apple pie filling. 2 quarts make a 9 inch pie.

7 qt. canning jars, cleaned & sterilized
Apples, peeled & sliced, to fill 7 qt. jars

Syrup Ingredients:
4 1/2 c sugar OR 2 c honey
2 tsp cinnamon
1 tsp salt
1 c. cornstarch
1/4 tsp nutmeg
10 c water
3 T lemon juice

Cook syrup ingredients until thick. Add lemon juice. Pour syrup over apple slices in jars. Seal. Process in water bath canner for 20 minutes

Canned Apple Pie Filling

12 pounds firm apples
4 cups sugar
1/2 cup cornstarch
3 tsp. cinnamon
1/2 tsp. nutmeg
4 Tbsp. lemon juice

Peel and slice the apples. Stir in sugar, cornstarch, and spices. When juice is making the mixture wet, stir in lemon juice and cook over a medium heat until it thickens, stirring frequently.

Ladle pie filling into hot quart jars to within 1/2 inch of the top. Wipe the rim clean. Place hot, previously simmered lid on jar and screw down ring firmly tight.

Process in water bath canner for 30 minutes.

I've got a pot of chopped tomatoes on the stove, reducing since yesterday. Hope to get a couple of quarts canned out of it.
Don't know yet what else I'll tackle today.
Got some ugly peaches that need processing too. I'll probably make them into sauce.
