I'm having my canning class tonight!! Finally :) Thanks to the generosity of my FIL, I have about 1/2 bushel of his tomatoes for teaching my class how to make salsa and stewed tomatoes. We will talk through marinara sauce, but I don't have enough tomatoes for that (blight!). Wish me luck :)

Good luck! How many people are coming over?

My mom's church had a canning class a while ago. She didn't go, but now she's wishing she had, so she could have helped me. She has very limited canning knowledge, but she's the only person I know of that I could call. I told her if they ever have a class again, that I want to go. Even thought the dirve is about an hour.

Thanks--6-7 are coming. I'm going to serve chips and salsa, French bread with marinara sauce and broiled mozzarella. I'm pulling together info from my favorite canning book, Ball Complete Guide to Home Preserving, which is the best canning book I have ever found. Does anybody else have a favorite?

Favourite book or recipe? the book I use is The Complete Guide to Home Canning. I have a pdf copy of the book that I downloaded for free.

When people post recipes from their Ball book, I look them up on my e-book and they are the same, pretty much.

Today I am canning more tomatoes. Mine are finally beginning to turn red in more quantity, plus I have frozen ones from my last farmer's market trip.

4 quarts plus 1 pint of spaghetti sauce
5 quarts plus 1 pint of spicy tomatoes (with 3 hot peppers in each jar)
3 quarts of tomato juice.

Today, with 28 jars of potato cubes, 7 pints of ground turkey breast, and 7 quarts of potato chowder base, I hit 500 jars canned since June. And, it was my birthday. A twofer.
