Lentils left in bag from canning (enough to fill canner) were cooked and have been eaten 👍 didn't get to more sweets in jars. Maybe today. I really prefer baked but, love to have ready to eat quickly in pantry, too. Plus a whole case bought before Thanksgiving😋. While moving tons of stuff to rescue the freezer ham, found I have a LOT of frozen peppers to use up! Need to thaw a turkey, cut & can! What's in the bottom? How long? Prob things to cook for cats 🙀

Today I am canning chicken. I love canned chicken in a casserole or chicken salad.
Recently lots of easy to make Hummus pressure canning 1 cup dry garbonzo, 1/2 cup lemon, 1/2 cup toasted sesame. Can it set it on the shelf - when we want some we dump it in the blender i add, 1/3 cup toasted almonds, 1/3 cup good olive oil, sea salt, 4-5 nice fresh garlic clove, 1 tbls cumin, 1/2 of a frozen iceube (stash in freezer) of cilantro pureee...

Got turkey from freezer...thawing. Will process tomorrow.😄 Today I caramelized onions. About a pint, which I put into ice cube tray. Now freezing. They'll be great for fast use later. May do more. Love them on a hamburger.

5 pints turkey broth @pressure, on timer, in canner! That'll be 10 pt & 1 qt in pantry. Plus 1qt, 3 pt ckn broth. I'm done with broth🤪 -- until another big cook. Just can't waste food 🤷 But that's plenty for me!!!!

While the canner is out, think I'll prep some sweets and get more of those canned up. I overloaded myself at a sale, need more canned to be safe.

Not canning, but...
The wife is having surgery next Thursday, she is worried about me having to cook, so we got a bunch of meat last night. I have six sets of roast/veggies in the freezer now, ready to pop in the crockpot, several 1 pound packages of stew meat, chicken to cook flavor up and freeze for quick meals, and 20 pounds of ground beef, some to cook and freeze, some for meatloaf.

About halfway through it right now
