I made a batch of salsa today. Of course I was an idiot and didn't wear gloves while slicing the haberneros. Ow ow ow ow ow ow!

I also took some roasted hot red peppers and started them fermenting for pepper sauce. It wont be a real tabasco type sauce because that takes 3 years to finish!!

I have a gallon of cider, with a handful of raisins added, fermenting on the counter. :D

I tried my sliced jalepenos and garlic today... HOLEY MANOLEY!!GOOD STUFF! I definately need to make more because I want to share to brag, but am not about to run out of them!!


Hmmm... What else can I ferment??

Ooo, I didn't think of putting garlic in with the peppers! I still have to make a bunch of condiments. Soon.

I fermented a LOT of acorns for my pigs and they went hog-wild over them, turning them into lovely hams and bacon for me! Those acorns actuall smelled rather good.....

Max found my salsa and raided it before it was ready :p I was able to save a couple of pints. (Rotten kid!!!)

I also finally got around to soaking some pinto beans. I ran out of whey so I just put a blob of yogurt in the water and let it sit for 2 days, The white foam looked gross, but it smelled fine and rinsed off ok. I added some cumin and let it cook while I was at work. Tossed some of the beans in a batch of chili. DELICIOUS!!!

Soaking beans is such an important step. My friends make me crazy when they talk about pressure cooking and not having to soak. I tried explaining that unsoaked beans rob your body of nutrients while soaked beans are very nutritious. I have explained about phytates, lectins , and protease inhibitors, but they roll their eyes and treat me like I am a crazy person.

I am crazy, but I'm not stupid :p

When it comes to food and medicine too, it is amazing how people are like sheep and just follow along, instead of thinking for themselves. So much of what we have been told of how to prepare our food and what to eat and what not to eat has never made any sense to me. I have done my own research, listened my to my grandmother and great grandmother and also followed my gut most of my life. Not USDA recommendations!!
And then there is this whole instant gratification thing people have nowadays!! :rolleyes: DSS asked how my wine was coming along and how long it would take. I told him I wouldn't be able to find out just what it was like for six months. He was shocked: "That LONG?" Yup, I can wait that long to find out and I will start somthing now, that I cannot have for six months :)

I just bought my first 1 gallon crock. WILD FERMENTATION & NOURISHING TRADITIONS are on the way. Can't wait to get started.

What I have now is green tomatoes and zucchini to work with. Can I do anything with these? And NO I have not read all gazillion pages of this thread. :D

That Sweet Potato "soda" is one I am really curious about. Haven't been brave enough to try it yet though! LOL
