No eggplant seeds, but I bought an eggplant! I didn't feel like making more stops for seeds.

Word to the wise: cook and use it quickly. They have a very short shelf life.

Oh I've cooked with them lots before, it's just been a while (eggplant parm usually) and this thread reminded me it's been too long!

My cilantro is sprouting. My cukes are setting tendrils and buds. Way too early for the cukes b/c they will need to be repotted soon. I don't have the indoor space for large pots of cukes. But, gotta love the tenacity of them. They look real healthy. but!!! Gotta love it.

Pssst, Eggplant lasagna is bomb af
Thin slice eggplant and layer it just like regular lasagna! Need a lily bit longer oven time but is good!

I've used larger zucchini to make lasagna. Eggplant is firmer and would be good.

I love eggplant parmesan. Not so much the chicken version.
