What can I do with buttermilk?

I have nearly a quart of buttermilk, which will expire soon. What can I use it for? I hate to see it go to waste, but we do not drink it. I bought it to use in a recipe, I think ...can't remember!

Freeze it in an icecube tray, then transfer to a ziploc. Each cube will be about 1/8 cup or one ounce of buttermilk.

I like it in biscuits, pancakes, muffins....anything that you want to be light and fluffy. But I don't bake much anymore. Mostly for company. It is too tempting to pig out if I have it in the house!

I'm also thinking it would be good in the biscuit-y topping on a cobbler. Or an actual biscuit topping on a pot pie. Use whole wheat pastry flour, it will be denser, but still yummy.

there is only one thing in my opinion to do with buttermilk that is ready to turn

marinate a whole cut up chicken overnight in it...

then make some old fashioned Southern fried chicken

Oooh, that sounds good, HiDelight!

I would also vote for making some creme fraiche, and top fresh fruit with the creme fraiche. That is a nice summer treat.

Ok. now you have to tell us how to make that creme fraiche!

HiDelight, I LOVE fried chicken more than anything in the world!!! That was how my nanny made it in TX, she soaked it in buttermilk, (cayenne pepper, salt and pepper) overnight and fried it up for lunch in her ginormous black cast iron skillet. :drool

Here ya go BBH: Home made Creme Fraiche

Ingredients
1 cup heavy cream
2 tablespoons buttermilk
Directions
In a bowl, combine the cream and buttermilk. Cover with a clean kitchen cloth in a warm, draft-free place and let sit until thickened, but still a pourable consistency, 12 to 16 hours. Stir and refrigerate until ready to use. (Can be refrigerated for up to 1 week.)

Fried chicken! Oh yeah.......
I think I will freeze some as well good idea :)

Stop making me hungry, BBH!

Creme Fraiche is easy to make! Here is a recipe . When I use it on fruit I will whip it up with some sugar and some lemon or lime peel and/or juice.

Dace beat me to posting the recipe, I see. One thing I will mention is that I will heat the cream before adding the buttermilk because that ensures that you are cultivating the buttermilk and not something that may have been lurking in the cream. . . . It is probably ok not to heat before combining, just more safe to heat first.

Thanks Dace and DM for the recipe. I've got to make a list for my next market trip...I love buttermilk!
