I've done relish with onions in it - but not sspecifically an onion relish. Sounds delish!

i've also done garlic relish. one year i had about 12lbs of garlic peeled and turned it into sweet and sour garlic relish with a few pepper flakes in for color/decoration and a bit of heat. used a meat grinder to get it minced and cooked it up. the house smelled wonderful to me, Mom had other opinions. :) ended up with cases of the stuff and ate most of it over the next 5yrs. a friend of mine who liked garlic took a case for herself and shared it around with her friends and many had positive comments. pretty much used it as a hotdog or burger topping and also as an ingredient in all sorts of bbq sauces and other dishes. for me you can't really go wrong with sweet and sour in general... :)

Will do. Spent way too long peeling and chopping another behemoth squash this morning. Just got it in the oven. This might be a bit of a process, lol.

with something named Argonaut perhaps that is a clue... :) in this weather you can surely skip the golden fleece and the fight with the skeletons (which is one of my earliest nightmares).

Squash leather. Not hard to do - not sure I'd do it again, lol.

Started by roasting squash chunks.

Transferred to stove top to try to cook out more water. Pureed with a hand mixer. In hindsight I should have put them in the real blender to make sure the puree was smoother.

Spread it on the trays. (Note to self - get an offset spatula.) The light-colored chunks are apple. I had one laying around so I added it. That's why I should have used a "real" blender.

Looks burnt but isn't. Just areas that are a bit over-dried. Tastes great! Probably shouldn't have run it overnight. Should have started it in the morning so I could have checked on it during the day.

Despite the cracks it held together pretty well.

Rolled strips up in wax paper. Not sure if that was necessary or even recommended - but that's how I did it.

It definitely tastes better than it looks, lol. Kinda like dehydrated pumpkin pie.
