Garden fresh and home canned is so much better tasting than store bought. I find it hard to go out the door when tomatoes are cooking in the kitchen. I'm tempted to sneak a glass of warm tomato puree to drink, but I know better. I totally forget to take a gravity reading with hydrometer. I'm always curious to see how much fermentable sugars there is.we don't ever do puree concentrate here, but tomato chunks (not diced) and tomato juice are easy enough. i love the smell too and even after canning tomatoes all day i can still sit there and eat bits of them as i'm chunking or stirring while heating up. yes, i'm careful about using a clean spoon each time.
She's getting creative... I asked her what's cooking in the oven? She said the skins and seeds I had you save. I gave her a dumb look she said it will become tomato powder. I said really? You're kitchen do what you want. She said exactly
