What is wrong with my yogurt?

I guess I've been impatient. I let it incubate overnight and it is fine. My recipes are all for commercial starter, so I was just guessing the amount of yogurt starter. The recipes with commercial starter say 6 hours. Mine has gone 16 hours. I like firmer yogurt, so I'm going to let it "grow" maybe 2 more hours.

Thanks for the tips! I generally don't use the microwave at all, but this is an exception. I can mix up the milk and culture together and pour it into the jars, THEN microwave it on low power to bring it to room temperature. Slick. And saves SO much time and washing pots, and dishes!

Maybe next time I'll get it warmer and see if that reduces my incubation time.

I don't eat it plain, I use it for cooking and smoothies, so if it is really tart, it doesn't bother me at all!

i think this is proof that BBH was right - microwaves are evil!

Twice I heated it in the microwave and both times it was too thin. I think the microwave must heat it unevely with hot pockets, so it seems at the right temp, when overall it is not. Try the stove next time.
but really - it may be b/c the microzapper doesnt heat it evenly... when you warm on the stove or in a hot water bath the heating is more gentle and controlled.

i also took WZ's suggestions and strained mine thru cheesecloth - wow it really was great! but yes, i know i know... with the whey removed it isnt really yogurt. but its yummy and can be used like sour cream or cream cheese
