What kind of stuff do you can?

Since we are in the middle of the canning season, I have the bug of course :p and I have canned a big variety of things thus far. I was mainly wondering what you have canned. Mainly to give me motivation :cool:

So far we have canned:

Strawberry Jam, Chicken Broth, Carrots, Tomatoes, Tomato Juice, Spaghetti Sauce, Peaches, Blackberries, Sloppy Joes, and Stewing Meat. Then Friday I will need to do something tomatoey, and I will probably do a batch of Squash and Onions to use in my casseroles I make. Then a large batch of Baked Beans, this Saturday.

What about you all?

Ohhhh chicken stock. Must remember to can chicken stock...

So far, tomatoes. I'm going to be adventurous and can some of Moolie's soups next so we can have quick eats. And then the chicken stock sounds like a really good idea to be able to free up some freezer space for more important things like steaks!

For us, canning is about convenience food. We have such limited time available that I am really interested in exploring ways we can have convenient real food.

I want to can:

chicken, beef, cheese, and deer meat as well, but we haven't gotten that far yet.

I like convenience foods canned up to, and so far we have been done pretty good with it. Do you want the sloppy joe recipe hqueen13?

If I happen to have more tomatoes after I do the salsa, tomato soup, another batch of spaghetti sauce, and a few batches of diced tomatoes, I'd like to make some plain Tomato sauce....

I have returned to canning after a long absence.......and I am having a blast. I have always put up cream corn, peas and okra in the freezer, but not every year. When we had a bumper crop of something, we usually gave it away.

I have canned
soup consisting of tomatoes, green beans, yellow squash, zuchinni, onions and basil
strawberry fig preserves
blackberry fig preserves
sweet spicy pickles

So far this summer:

strawberry, cherry, raspberry, Saskatoon berry, and mixed berry jam
tomato sauce
mild, medium, and Roasted Tomato Chipotle salsa
Chili Sauce that's pretty darn close to what my Grandma used to make
beets
sweet pickle relish
vegetable antipasto
dilly bean pickles
mango chutney
ground bison
chicken chunks
various soups and stews/chilis

Mango Chutney

1 cup apple cider vinegar
3 1/4 cups sugar
6 cups peeled sliced mangoes (about 10 medium)
1/4 cup peeled freshly grated ginger root
1 1/2 cups raising
salt & hot pepper flakes to taste
1 clove garlic, minced
1 large onion, sliced thinly

Boil vinegar and sugar in large pot for 5 minutes, add remaining ingredients an cook for about 30 minutes until thick. Pack into clean hot pints, leaving 1/2" headspace, process 20 minutes (water bath).

So far this growing season, I've only canned strawberry jam. Other than produce, I have canned this year:
bean soup
chicken soup base (chicken + veggies, I add the rice or noodles when I open it)
chicken
chicken stock
ham
bacon
cheese
butter
pork
beef steak
cranberry juice
venison (the ground that was left in the freezer)

I want to can:
hot sauce
spaghetti sauce
ketchup
pickles
pickled beets
venison chunks
more chicken
more cheese
more butter
more bacon
apple pie filling


My list is a little shorter this year, as I am dehydrating much more things that I used to can, including pumpkin pie filling :D

I have not even started tomato or tomato products yet. I will be visiting my local farm stand for seconds. I still have about 24 quarts of sauce from last year. Almost out of diced. I'm hiding the last 2 quarts of pears. The tree won't be ready until Sept.

I have 4 turkeys to butcher soon. They will most likely be canned as well.

Well that's all I can think of right now.

I want to can several jars of apple butter this fall. I have only canned dill pickles, bread and butter pickles and tomato sauce this summer so far.

ugh, nothing yet.... :hide with the vacation and several non-profit volunteering things, and work..... I gots nothing, Buff. so unlike me. when you comin' up to help out?
