What to do with green eggplant?

I got a couple of eggplants that grow 8" green eggplants. Now I can't think of something good to do with them. Any suggestions?

Fried eggplant, YUM!
Eggplant parmesan, YUM!
Cube and use in soups and stews.
Slice or cube to desired size and freeze for later use.
