What would you do with a big bag of grapes?

I got a big plastic grocery bag of Concord grapes at the farmers market. I was excited about them, but now I'm not sure how best to use them because 1) we are using a lot less bread so we don't need jelly and 2) we are avoiding a lot of overly sweet things like dessert so we don't need pie or pie filling.

I'm thinking about making a grape juice concentrate that can be frozen or canned, but I don't want to have to use a ton of sugar in it. I'd use it for sweetening smoothies and ???

What would you do with the grapes if you were eating sort of like a Paleo diet or at least trying to follow some of the Weston A. Price/Sally Fallon guidelines?

I would ferment it.

But grape juice is a good idea. You hardly have to concentrate it, it's already way too strong to drink straight.

Do you have a food mill?

I do have a mill we use to make tomato juice.

I wouldn't know where to start with fermenting. :/

I would freeze them until I had a really large amount of grapes to process.

I know you aren't using the jelly anymore, but I found homemade grape jelly is a wonderful addition to the food baskets given away by the church at the holidays. Just a thought.... ;)

Pop them in the dehydrator for raisins! Then they can be added to cereal, made into homemade trailmix, eaten by themselves, added to sweet breadsor for holiday baking...
