DH was reminiscing about pecan pie a couple days ago. Poor guy doesn't get many sweets so I've been researching sugar free pecan pie recipes. I'll leave off the crust and make it similar to a custard no matter what recpe I choose. I'm contemplating two different recipes I found. One calls for sugar-free pancake syrup as the sweetener and the other uses Swerve sugar-free brown sugar.

Anyone ever make a version of sugar free pecan pie?

me would just like some pralines and that is good enough. we've largely gotten away from eating crusts under things we make for ourselves (Mom doesn't like pie crust anyways and i can easily do without it). there are very few nuts i do not like so anything with roasted almonds, pecans, walnuts, peanuts, etc. i'm good to go with those and if i want to add anything sweet i can use some chocolate chips, coconut, butterscotch chips, sweetened condensed milk, etc. but i don't have to go for a huge portion or a whole pie. just a few bites works.

I didn't have almond flour but I did have a walnut pie crust - so - a pecan pie with a walnut crust instead of a pastry crust. I did the math and even though it's not really low carb at around 18 carbs per slice - it's a whole lot better than 65 -70ish carbs in a regular piece of pecan pie!

Taste test to come after I get up off my behind and cook some steaks for dinner.

I’ve got a say - it’s pretty darn good. Definitely better than no pecan pie at all!
