Cooked a small chunk of pork loin, added carrots, onions, potatoes. Been eating for couple days. One more meal there. Chicken thawed to bake tomorrow. Thinking rice and gravy, canned green beans....or brussel sprouts.

I did a sheet pan dish last nite. I found three old vac packed thighs and some home made pesto in the freezer, along with mushrooms and onions and carrots. Tossed all in the pesto, then put on foil in the oven for 45 minutes at 420. We each ate one thigh and lots of the veggies!

sliced potatoes and onions, added a bit of sour cream on top.
it was going to be German potato salad but we decided to just leave them plain so that Mom can have some that ways with butter and whatever and i can add the vinegar (and hot sauce) to mine. if i want bacon bits i can heat those up quick and put them in if i want them too and i actually prefer to do that after anways as i like the bacon bits still crunchy. not sure i'll get that far. been eating a lot of meat lately and i'm happy to take a few days off here or there and eat other things.
