I've got chicken thighs thawed so tonight will be something chicken-ish. Somebody mentioned gumbo a couple days ago so I may lean in that direction. Won't be authentic because we'll skip the rice. May or may not totally change my mind between now and dinner. Another possibility would be a sheet pan dinner of some sorts. :idunno

i made some cole slaw last night using what was left of the jar of Miracle Whip, added to that was some apple cider vinegar, brown sugar, mustard packets and a squirt of extra mustard from the bigger jar, then added peanuts and leftover walnuts. turned out exactly how i imagined (i've done things like this enough that it isn't a surprise :) ). i ate about half of it last night and had half of the other half today with lunch (a few bites of vegetable soup and a few cherry, pecan, chocolate chip cookies and milk).

tonight it will be a vegetable beef soup reprise. no bread or extras as i already had my cookies for the day, one square of chocolate (chocolate chip,etc. cookies don't count) and peanuts. some cottage cheese probably. it gives things more staying power. :)

Cookies - yum!

i know! and what's even worse is that when Mom was making them i was really enjoying raiding her mixing bowl for bits of cookie dough. when i'm cleaning up after she bakes i also get the option of scraping any bowls i want for even more snacking. it's a tough life... (being the family dog)...
