It was a quick toss it all together job.
1 lb ground beef, small diced onion, some diced pepperoni fried up, seasoned with oregano and basil. Then dumped in a small jar of pizza sauce. After it got hot, spoon onto bun bottoms, cover with shredded mozzarella, nuked for about 45 seconds. Then put the bun top on and serve.

The wife is sensitive on some traditional toppings, but I don't see why you couldn't add any thing you want (mushrooms, peppers, etc). Having the ground beef already browned and in the freezer is a huge time saver

That sounds really good!

We're having the leftover moussaka tonight. Didn't want to freeze it, so easy cooking day for me.

@FarmerJamie we eat quite a lot of Sloppy Joes and are happy with them, but i think Mom would be willing to try something different if i can get her over the instant "No, it's strange." hump...

she does want something quick she can make these days when she gets home and is really tired. i'm trying hard though to get her to ask for what she needs while she is there (it's very silly that she hasn't, but that's my opinion) so she isn't so hungry and grumpy when she gets home (it might be a traffic hazard consideration...).

she's talked of making some small burgers and putting them in the freezer. we'll see what we can come up with.

We usually only eat half the patties I make when we do burgers. Other 2 get tossed in the freezer for a later date. They reheat in the pan easy enough

I've mostly mastered cooking for two. We rarely have leftovers, and generally don't like eating them the next day anyway. If I make chili, Italian beef, or a soup, I will either put the extra in the freeze dryer or the freezer. Leftovers seem so much better when you pull them out a couple weeks later. Especially when it saves me from making a meal!!

We haven't had a sloppy joe in years, but your version sounds really good. Might have to think about an Italian sloppy joe.
