Safeway had large chicken breasts on sale for $1.97 a lb value pack. Max 4 lbs, so I got the largest package I could get. Got two vac packed with two breast in each, and then kept the other four for last nites dinner.

We are not fans of white meat cus its dry and crumbly. NOT LAST NITE! I found several similar recipes and concocted my own.

Roll "cut in half lengthwise" the large breasts in oil, holding up to drip. The roll in a spice mixture of a bit of brown sugar, and all the spices you want. Cook in very hot oven 425F for 20 min. They were fabulous!!

yesterday i fried a few burgers and we had them with mushrooms. very simple but that is what Mom wanted. this morning i fried up eight more small burgers so Mom could have them to eat at night when she gets home and she wanted to take some to her friend's place.

for breakfast i finished off some sort of baked beans from the freezer, they were good, but i do need to eat something else now as that was some time ago.

Had roasted chicken on pumpernickel sandwich for breakfast at 5am....not sure what lunch was 😵‍💫...but, dinner was cottage cheese while cooking mushrooms, then those.🤣 Strange day.

I like the chicken tacos idea. Maybe tomorrow I'll clean up that chicken and make some taco chicken & cheese burritos for the freezer & for lunch. Need to cook up bacon & eggs for breakfast burritos to freeze (bacon/egg/cheese). There will be grilled onions & peppers in there some where.👍

I like a protein breakfast but, not cooking ea morning. So these or heating leftovers from dinner works. Will cook down chicken carcass for broth this week, too.
