What's for supper with pulled pork?

No, seriously, what's for supper with this delectable meat? (OFG, help me out here, please!) :bow

This is just the meat - it was not cooked with a rub, or bbq sauce. The pantry holds lots of spaghetti sauce and cream of chicken. I made enchiladas out of it last week (YUM!), but I need ideas for tonight.

Cole slaw usually. Then some sort of tater. Baked beans maybe...... :drool

Tamales! There is a great recipe over at BYC that I used.

Or make "carnitas" and flavor with whatever Mexican spices you have on hand and serve with tortillas.

If you don't have the makins' for that, how about just using some barbeque sauce on it and serving it with buns? That always gets inhaled here and is so easy.

See, that's the problem. No cole slaw, no baked beans. MIGHT have some sweet taters in said pantry (if they haven't started sprouting yet *sigh*), but I know there's no regular taters. So we need non-traditional "what-to-do-with-it" recipes for the pork butt :p

If you cook it nicely and shred it up, you can just serve it with some potatos or rice. Meat doesn't have to always have a heavy sauce. My kids like it when I serve warmed applesause with pork (and they are teenagers) instead of veggies. But I'd just cook up those sweet potatos too and serve them with butter, pork and potatos.

Dump in some of that cream of chicken, heat & serve over egg noodles, rice or spaghetti squash. Maybe add some veggies or mushrooms? With mashed sweet potatoes on the side mmmmm

Or, you could bake the sweet potatoes & top them with pork, cheese, butter & sauted onions. Ultimate baked sweet potatoes.

And there is no reason you can't use pork as the meat for spaghetti! Yum! :)
So when should I be there? :lol:

Oh, and I have a question, can you not eat sweet potatoes after they sprout? Cause I do, if they look good :hide
Amazed that I used to loathe sweet potatoes...

We normally serve it with rice of any kind and a veggie on the side.

If your trying to get creative I would just use it in place of any shredded meat. Enchiladas, tacos, etc...

Maybe as a sandwich on a bun?

I've used it as enchilada/taco meat countless times - yummy!

Tonight, I decided on "it's really cold, we need a pot of soup" :D

So in went one of the 2-qt freezer bag portions of meat, a jar of spaghetti sauce, some corn, some green beans, some navy beans, and some of the broth/stock from when the pork cooked. If I decide to, I can add some kidney beans, too, and there is this lonely can of carrots (yech....) And make up some corn bread to go on the side. :drool
