Where do you buy your rennet?

After telling myself, I was not going to embark on another ss living experiment...I can't help but be drawn to cheese making...

So, all you cheesemakers, where do you buy your rennet? Online or what type of store would I mostly likely find it in? I live in a metro-city, so I'm not even sure where to start :hu ?

I got my first set of supplies from New England Cheesemaking Supply, and when I got serious and needed higher quantities at a better price, I switched to the Dairy Connection. The first one is easier to deal with for newbies, I think, especially if you are working from Rikki Carroll's book, she and her hubby own the company. The latter company has more serious stuff, but you need a better idea of what you are looking for, although they have been AWESOME about answering my questions.

ETA: I started with veal rennet, switched to vegetable rennet, and recently switched back to veal rennet. I read that aged cheeses can become bitter with veg rennet, and I also am trying to do things in a more traditional way. Just a thought.

I can buy mine at a local brewery supply shop but last year for my birthday my very sweet MIL bought me a pretty nice starter kit complete with a cheesemaking book for beginners from Hoegger's Supply.

NECS also, but I'm still using up my first kit :) I make cheese VERY infrequently...

I get mine from http://www.lehmans.com/
Their store is only about 20 minutes from here. If you are ever in the area, it is well worth it to stop in and go shopping.

My cheese making class isn't until next month, :( I am having a hard time waiting with all of you talking about cheese!!! :drool

i've gotten it from New England Cheese supply, hoegger's, and also Lehmens...and when i was traveling i went into a beer maker's shop and wow they had all the cheese stuff too!

and i've used both the animal based and veg based - for me, in my extremely limited, not know about about the whole thing... i found that they both worked about the same

I read somewhere, years ago, in a book about country living in Italy about using dried artichoke as a "veg. rennet". As my DH doesn't eat cheese I've never put much thought into making it, other than drained yogurt cream cheese. But now I'm thinking that maybe I'd like to start :D
