Except for the cabbage, and the stevia (the carrots are sweet enough) this is basically the carrot salad that I make. More carrots, of course, and I thin the mayonnaise with some yogurt. Dried currents (they are smaller than rasins and don't have the startling sugar and flavor hit. More sublte. but if I'm in for a big rush I use dried cranberries, I usually chop them up smaller)
enough mayo to moisten
Stevia 7 to 10 drops ( you don't have the stevia aftertaste in this recipe)
Chopped walnuts
