hey AL!

you'll do great - really! just dont psych yourself out. print the instructions for dressing the meats so you can refer to them. that way you can concentrate on each step and not "whats next"...and you can read ahead when you are ready.

i swear, after the first one you'll say.... "thats it? really? well ok..."

just take your time. and only do as many as you can that day... for whatever reason your arms will be really really tired. we find that when we get tired we do a bad job and just get more tired and cranky. so stop when you have had it.

trust the way of things
pray for courage

drink AFTER ... sharp knives and all
;-)

pasta maker? who needs a pasta maker? just old school it, baby.

LOL that pic is awesome

Well, we had originally intended on doing 7 at a time for 3 weekends, but since we are a week off "schedule" and the 3rd day will be Christmas we will probably try to do most or all this Saturday. Not excited about that part... I AM however, thrilled with the prospect of not having to tend to these things anymore. Especially since it is so cold out now.

What is up with it being 26* in FLORIDA? Last night it was 26 here and 29 in NYC. That is just wrong. These are January temps, so I am very very grateful that I have heat this year, because January could be interesting.

Canada is still letting all it's cold air down. I don't want these types of temps now either! I'm so ready for winter to be over, and it hasn't even officially begun! Hope it warms up for you.

When you print up those instructions put them in a big ziploc bag to take out with you. That way if you need to pick them up you don't get chicken guts on your paper or if the dang wind blows them off your table they won't get dirty and unreadable...we had to do that with our order forms so we knew who got what and how. Made it a lot easier.

Glad you enjoyed the pic!

great idea lori!

and um.. i guess i should throw in to wear old clothes you dont really care about. we dressed some of our meats in about 20* weather and i put on 3 layers of sweatshirts with the outermost layer the oldest. that way i didnt care if um.. that is.. er.. there were.. um.. "stains or whatnot" on it.

and then wash your "dressing" clothes in cold water to take the stains out.

and whatever you do dont go thru the Dairy Queen drive thru after you get done. they'll hand you ice cream and beg you to just drive away FAST. dont ask me how i know this.

Deb - seriously... it is snowing. Not sticking or anything crazy, but snowing. in Florida.
It snowed back in February. The first time we had any accumulation in at least 14years, because it was the first time my nephew saw snow. Actually, we went about 30 miles north to find this accumulation.
These are photos from February - rednecks in the snow LOL

Rio LOVED the snow

Seriously

He wants to move north and change his name to Nanook.
T12 is on his skimboard with bungee cords tied to Rio's collar  Training Rio to pull a cart his command is "Go"... he is kindred spirits with T12, so when he heard "GO!!!" he did lol .... and J14 calling him just added more fuel to the fire.

That is a great idea on the ziploc, Lori - thanks!
(and the old clothes, too OFG :p )

I am, however, thinking it would be great fun to go to a drive thru, or maybe the church office? :D
