Green bean cassarole ala nutrient dense.

You can use fresh or canned beans.
Find a recipe for "real" cream of mushroom soup. One that uses mostly cream rather then flour.
Assemble as you would normally and crumble pork skins over the top.

REAL Cream of Mushroom Soup

2 cups of rich broth beef or chicken
2 cups (or so) of mushrooms (your choice)
Large onion diced
1/4 cup butter
2 cups heavy cream
2 T cornstarch (or flour, but I am GF ;))
salt and pepper
----

Melt butter and saute onions and mushrooms until tender. Stir in cornstarch to thicken and add broth. Bring to a boil then add cream. Salt and pepper to taste.

YUM! and not a carb in site!

Can I assume that I substitute 2 cups (or so) of chicken, or broccoli, or *whatever* for Cream of *Whatever* soup?

This is basically the same recipe we use.
And yes, its the real deal. That awful canned stuff that passes itself as cream of what ever soup, is so not cool!

Yes indeed! Except I often also doctor those up a bit with cheese. I sometimes use skim milk as well, just depends on your calorie desires. :p Eat hearty friends!

I am a soup lover and being gluten free required me to UP my soup making skills.

I thought it was a very midwestern thing, but Colorado is full of people originally from WI, OH, IA, etc... but we can't resist bringing a dish. Even if you don't plan on something being potluck, it will end up pot luck :D

Gotta love it!!

If you still want something dessert-ish, what about a baked pear dish or spiced baked apples?
