Artisan bread help needed

If you are not averse to such things, you could add some gluten (buy at Bulk Barn labelled 'gluten flour'), or use a higher-gluten flour to begin with if one is available to you. That should make it poof a bit more.

The whole thing with artisan bread is you aren't supposed to knead it.--just mix it and then throw it in the fridge overnight, take out, let rise and bake. It feels good when I take it out to shape, maybe a little wetter than what my normal bread is like, and it does grow in size, it jsut does not get any height to it. It's quite frustrating.

Gotcha. I guess I really never knew what artisan bread was! :p I assumed it was the shape and ingredients...I learn something everyday!

Oh! a no-knead recipe.

(That is not really what artisan bread usually means. It usually refers to the whole general class of homemade noncommercial bread, with the implication of a lot of handwork and experienced 'feel' going into it, usually a sort of country-style loaf made on a sheet not in a pan, but usually kneaded. I think the term was invented in the 80s by foodies :p, previously it would have been called simply 'good bread made by hand' <g>. The recipe you're talking about sort of qualifies in the sense that it is a handmade small batch type thing, but is a sort of unusual special case, not a typical artisan type bread)

I'd say more gluten, or if you are using whole wheat, cut it with some white flour (at least half and half, or a greater proportion of white) if you want a taller result.

Well you can knead artisan style breads it is just that this particular refrigerator version you are not supposed to NEED to.

Artisan bread is just more artistic in nature meaning that bakers put their own flair to it....I just call it rustic and more fun!
