Avocados

I have some really ripe avocados--can I freeze tehm? Can I make guacamole and freeze that? Is there anything else I can do with them? they won't last, and they won't get eaten for a coupla days.

Make guac and store it in a ziplock with all the air squeexed out. It should stay in the fridge for up to 3 days or so. I think you can freeze it in this state, but it may turn brown.

Guac with lime or lemon and with as much air out of it as possible will freeze fine. You can buy fozen guac at the store!!!

I am looking to buy an avocado tree this year for the yard. Haas variety, just like the ad that showe dup at the bottom of this page when I clicked on it !

Oh, to live in a climate that could grow avocados. I AM jealous. (didn't we have a little green with envy guy on our smilies?)

I would think it would freeze? What I buy at the store never lasts long enough to save.

Off topic- if I sprout a pit and put it in my sunroom in a big pot- will I ever get fruit??

This sounds funny, but it really works- when you make guacamole, put a whole avocado pit in it when you refrigerate the leftovers. It really helps prevent the guac from turning brown.

I have a tree. No fruit yet, but I read it takes about 5 years to bear. I think we planted it 3 years ago.

So valmom, yes, you could get fruit but it would certainly take many years.

Preparation Select avocados that yield to gentle pressure with rinds free from dark blemishes. Peel fruit, cut in half and remove pit.

Avocados are best frozen as pure unsweetened for salads and sandwiches, sweetened for other uses. Avocados are not satisfactorily frozen whole or sliced. For a better quality product, add 1/4 teaspoon (750 mg) ascorbic acid to each quart of pure or add 1 tablespoon lemon juice for each 2 avocados.

Pack into container, leaving headspace. Seal and freeze.

Sweetened???? Eew!

I have done this with the puree and lemon juice. I pack it tightly into small freezer containers, and place a piece of plastic wrap over it, and pressed down onto the puree. And then the lid. And freeze. It is still sometimes a little brown on the surface, but mix it all together after thawing and that solves that problem.

5 years is nothing! I have a pit on my windowsill right now that I hope will sprout.

Do you need male and female trees? (I hope not!)
